From the Le Vaillon and Séchet vineyards, Defaix's pretty Chablis 1er Cru Vaillons unfolds in the glass with aromas of dried white flowers, orange peel and ripe green apple, framed by a slight touch of reduction. On the palate, it's medium-bodied, satiny and enveloping, with good tension and a lively, chalky finish despite its texture and volume.
