The Saint-Joseph red and white wines from Maison Paul Jaboulet Aîné pay homage to Victor Hugo's 'Légende des siècles'. Inspired by a historic battle, the name references a famous verse: 'Et du vin de ce vin qu'aimait le Grand Pompée'.

Vines: Planted from 1989 to 2019
GEOLOGY
Light soil of schist and gneiss resting on a granite base.
VINIFICATION
Hand-picked at maturity, carefully sorted, and then meticulously vinified using traditional methods. The maceration lasts 3 weeks with daily pump over.
AGEING
Aged for 12 months in French truncated cone vats.
SERVING TEMPERATURE
Ideal serving temperature is around 16 to 18°C.
FOOD PAIRING
Mushrooms risotto, Cheese, Prosciutto and blue cheese, Grilled meats
TASTING
Inviting aromas of licorice, pepper, and black fruits lead to a palate adorned with refined tannins. Well-structured with perfect balance.
