The 2021 Barrels of Metricup Chardonnay is fermented wild in barrel (high solids ferment), it undergoes full malolactic fermentation and is matured for ten months in 20% new oak, (one Austrian barrel and one French) with fortnightly bâtonnage. It was bottled unfined and unfiltered, explaining the cloud in the glass. It has notes of preserved lemon, green apple skin, salted peach and layers of brine. This has nori sheets and cracked toffee and even a far-off whiff of coffee grounds. Very pretty, and the tannins hang around for a while after the wine is gone, contributing an extra layer of chew and grip to the texture. Very nice, it is savory, spicy and textural—all cool things for a Chardonnay to possess. I have supreme confidence in Peterkin's ability to craft high-quality Chardonnay; the wines are always possessed of high drinkability, too.
